In a large mixing bowl add the following:

 
  • ½ c butter
  • ½ c dark brown organic sugar
  • 1 egg
  • ½ c organic pumpkin
  • ½ c raw cane turbinado sugar
  • ¼ c molasses unsulphured
  • ½ tsp of pure vanilla
  • ¼ tsp salt
  • 2 cups organic whole grain spelt flour
  • 11/2 tsp ground cinnamon
  • ½ tsp ground cloves
  • 2 tsp ground ginger
  • ½ tsp baking soda

 

Mix all ingredients, place in refrigerator for 30 minutes.  After dough is chilled, remove from refrigerator.  Using wax paper make 1inch balls.  (Optional: coat in granulated sugar).  On cookie sheet place balls approximately 2 inches apart then flatten slightly with the base of a drinking glass.  Bake for 12-15 minutes.  Let cool for 5 minutes and enjoy!
